I am a lover of Enchiladas
I come from New Mexico and I got desperate for some enchiladas one day but I just had few bucks and really wanted some bad. As you might be able to tell from what I have told you so far I love enchiladas and I am very good at cooking them. I am about to give you my super fast Enchiladas Recipe. This recipe is great for someone that loves enchiladas but does not have the time to make them. I can guarantee one thing this are the best enchiladas you can make in less than Five minutes. You will also love the cost because you can make a dozen of these enchiladas for less than $6 dollars. If you dare try these you just might like these, but beware of people watching you make these. You only need three things from the super market and a microwave oven. You might also need a can opener. Yes a food from a can and yes you can make them enchiladas.
This is just my quick Enchilada Recipe you are about to encounter, I will make another hub telling you how to make the best Enchiladas in the World. These are the ones that my mom taught me how to make and boy they are tasty. They are 10 times better then my Wolf Brand version of Enchiladas but they are more expensive and take a lot more of your time. Its an art and you have to take your time and make every part of cooking come out just right and you get some darn good mouth watering Enchiladas. The sad part is when I cook these Enchiladas I will eat the Whole Enchilada with out sharing. That's not right but these enchiladas are that good.

What Ingredients do I get for my Fast Enchiladas
1. A dozen corn tortillas $1.29 to $1.59
2. 8 oz bag of cheddar cheese $1.98 to $3.96
3. 1 can Wolf Brand Chile $1.09 to $1.29That's all you need is the above, honest they are just that easy. You can buy any brand of Chile but Wolf Brand is the best can Chile as far as I am concerned. Cheap tortillas and any cheddar cheese will do as long as its not imitation (yuck).
* Note you can use what ever brand you like but Wolf Brand has been the best brand for my taste buds. Just find the best can Chile from your grocery store and you should still get close to the same great taste.
Really Simple to Make these Enchiladas
Its so simple a six year old child can makes these enchiladas but I recommend this is better for a bachelor or a quick meal for any one with no time at work to get lunch. Here is how its done
Step 1. Open can of Chile, bag of tortillas and bag of cheese.
Step 2. Get tortilla and add a spoon of Chile and cheese to cover the Chile. Roll tortillas and a little Chile on top and some more cheese on top of rolled tortilla. Make as many as you like. I thing 3 or 4 is good for lunch
Step 3. Micro wave in a safe microwave plate for about 30 seconds a enchilada.
Step 4. Let them cool of for a few minutes and Presto Enchiladas.. This really only takes about 5 minutes and your eating Enchiladas.
Just remember if you decide to cook these at work or some place other than your house that Chile does smell a little and some people might complain. Just a warning but if you love them as much as me you will take the risk.

I really Love Enchiladas
Enchiladas are my favorite dish and has been since I was about 6 years old. I remember my mom made enchiladas every week. I come from a very large family and we all loved enchiladas and all the food my mom maid with them. I am about to share with you my most favorite meal in the whole word and my mouth is watering as I write this.
Just imagine this for a few minutes, its super time and your mom made her famous enchiladas and you just can't wait to eat them. Along with the enchiladas she has made some Spanish rice ( rice cooked with tomato sauce, onions, peppers and alto of black pepper). She has also made a nice Salad to go with the enchiladas with thousand island dressing. When I was you the Chile was way to hot but what I did was add a spoon full of mayo and it cut the hotness down to bearable. If you can't stand the heat then get out of the kitchen and that's what I would do if the mayo did not work, I would run to the bathroom and rinse my mouth with water and stick a towel up my mouth. But I still loved them enchiladas because they tasted so good. My other favorite thing about My Mom making great enchiladas was her Sopapillas. Those where just perfect for enchiladas because you could stuff the enchiladas in the Sopapilla because my mom would cut them into triangle shapes and they would fluff up just nice enough to stuff them with both Spanish rice and enchiladas. There would also be a big pot of Pinto beans but I hated them back then ( No I love pinto beans). I guess when I was you I was afraid of getting teased for farting with a bean smell. Kids where pretty cruel back then. For Desert we would just eat some more Sopapillas and just add some honey and that's my favorite meal.
